I just got this recipe at my Weight Watchers Meeting...
I am down 6lbs and counting...
Chicken with Watermelon Salsa
Difficulty: Easy
Servings: 4
Ingredients:
Chicken
2 Teaspoons Canola Oil
1 Teaspoon Fresh Lime Juice
4 (4oz) Boneless Skinless Chicken Breasts
Watermelon Salsa
2 Cups Diced Watermelon
1/2 Cup Diced Yellow Bell Pepper
3 Tablespoons Chopped Fresh Cilantro**hint below**
2 Tablespoons Fresh Lime Juice
1 Tablespoon Diced Red Onion
Preparation:
1. To Prepare Chicken - in cup or small bowl, combine oil and lime juice;
brush chicken breasts with oil mixture. Grill or Broil chicken until
cooked through and juices run clear.
2. Meanwhile, in medium bowl, combine salsa ingredients, mixing well.
3. Place (1) one cooked chicken breast on each of 4 plates; top each with
1/4 of the salsa.

Per serving: 190 Calories; 505g fat; 0.7g fiber

**if you only use Cilantro in this dish, watch for it in markets where you
can choose the amount you purchase, otherwise you can clean and put it
into a good quality freezer bag and freeze Cilantro and other herbs until
you need them again**
